It's my birthday week - and I haven't changed a bit!
Monday 6th to Sunday 12th June 2016
Monday we got the android box fitted successfully. Other than that we worked and walked. Chris, Tina and her son Max popped in for a drink. They all looked a bit weather beaten after a day out on their boat. For dinner I made penne with a sauce made of roasted courgettes, onions, garlic, passata, sun dried tomatoes, basil, oregano, chilli and mascarpone. It was very good but quite rich.
Tuesday was a public holiday which really didn’t affect us. For dinner I had left over pasta which I baked with a cheddar cheese crust and it was delicious; Sam had half a pizza as it was a low calorie day.
Wednesday we went to The Atrium and bough a tower fan for the office. Then we went on to HomeMate and bought two beach chairs and an umbrella. Late afternoon the air conditioning engineer came and sorted out a couple of problems we had so now what with air conditioning, fans and beach furniture, we should be well sorted for the summer!
For dinner we went to Miracles for beers and pizza. Fe followed that with ice creams from Congusto for a change. Their ice creams are excellent and they have some unusual flavours. I had mint with chocolate and butterscotch. Sam had black forest gateau flavour and stratiacella.
Thursday Sam went to art class. For dinner I cooked jerked chicken. I started it marinating yesterday and today we baked it with sweet potatoes. It was good but next time I will add more salt and more chilli to make it great!
Friday Sam went to see Tina and drove there and back all on her own! I got my head down and worked full on. In the afternoon we went to the supermarket to stock up ahead of Ben’s visit. For dinner we had frozen Indian mixed starters which weren’t great.
Saturday we cleaned ahead of Ben’s visit. He arrived in the evening from Rome – his flight cost £5! For dinner Sam made us a vegan spread of roasted vegetables, cumin dusted aubergines, balsamic roasted tomatoes, olives, humus and crusty bread. It was great.
Sunday we walked along the prom to Miracles and had luke-warm cappuccinos there. We walked on taking in the sights at Café del Mar and Ta Fra Ben then called into Cheeky Monkey for lunch – nachos “focaccia style”, which turned out to be a sort of pizza with a nacho base. Strange but not unpleasant. It was a monkey day, actually. We visited the monkey in the breakwater (honest, there is one there, I wouldn’t make it up), then we saw a house that has a giant gorilla in its garden, then we went to Cheeky Monkey for lunch. If you want you can spend your time there sitting on a swing, eating peanuts and peeling bananas. Honest!
Sam took the short cut back home but Ben and I walked on past the salt pans, through Salini Gardens, past the football stadium and home – via the bakery. For dinner I cooked a chickpea and BBQed vegetable casserole which was delicious and which we served with lots of crusty bread.
